mmm chicken salad

something I whipped up yesterday with leftover roasted chicken

one chopped roasted chicken breast
1 tsp tarragon
1 scallion, minced
1 long stalk of celery, finely minced
1/4 cup of dried cranberries
2 tsp fresh parsley
1/2 an apple, finely chopped
2 tbsp mayo
salt and pepper
couple pinches of Old Bay seasoning

Mix it all up and put it between some good rustic toasted bread.

For next time I would add some chopped nuts, either cashews or almonds.

The only redeeming part of going into South Coast Plaza is seeing Scarlett’s Mango ads everywhere. The Nixon Goes to China murals are kind of humorous too.
